A dish is only as good as its ingredients. We choose our spices meticulously and use top-quality ingredients especially meat and poultry in each of our Hyderabadi dum biryani, as well as our other offerings. Hyderabadi Xpress maintains its authentic taste and consistency by the basic recipe, spice formulae or masala and cooking techniques evolved over time as is aptly conveyed by our tag line

Our Story

The Hyderabadi cuisine is an amalgamation of South Asian, Mughlai, Turkic, and Arabic along with the influence of local Telangana and Marathawada cuisines. Hyderabadi cuisine comprises a broad repertoire of rice, wheat and meat dishes and the skilled use of various spices, herbs and natural edibles.

Quintessential Hyderabadi biryani is of South Indian origin, derived from ‘pilaf’ or ‘pulao’ varieties brought to South Asia by Arab traders. Birian means ‘fried before cooking’ and Birinj is rice in Persian language, combining into Biryani. ‘Dum’ style of cooking, came from Persia.

Kachch-e-gosht ki biryani or kachchi biryani is prepared with kachcha gosht (raw meat) marinated with spices overnight and then soaked in curd (dahi) before cooking. The meat is sandwiched between layers of fragrant basmati rice and cooked "in dum" after sealing the handi (vessel) with dough. This is a challenging process as it requires meticulous attention to time and temperature to avoid over- or under-cooking the meat.

We at Hyderabadi Xpress use this age old ‘dum’ cooking technique where every biryani you order is ‘dum’ cooked in an earthen pot fresh for you after you order. It is delivered in the same pot to your door step.

Hyderabadi Xpress is an attempt to marry Hyderabadi spices and technique with the fragrance of Dehradun’s Basmati rice. The result is a heavenly blend that bridges the distance between two cities that were settled around the same time in 17 century.

While you will love our Hyderabadi Biryani, we have also kept your pallet in mind and offer the traditional staples of North Indian cuisine in form of Veg and Non-Veg starters and main course. Each dish is cooked with passion and delivered with love.
